How in the world is it back to school time already?! You could be sobbing over sending your first baby to school, or you could be rejoicing having moments of silence for yourself with the kid(s) out of the house. You’ll find me somewhere in-between those. Either way, you’ll find mornings may have just gotten more complicated.
When life gets crazy, or routines get mixed up, it’s important to keep yourself nourished. I wanted to share a few of my go-tos for quick meals, low cost and low mess!
Breakfast: Scrambled Eggs (so simple, so versatile)
- If I have time, I’ll do a quick sauté of baby kale, garlic and sundried tomatoes then add the rest. If I don’t have those extra minutes:
- 2 eggs, in the pan and scramble up
- Top with some feta and black pepper
- Pair with either a piece of toast or a piece of fruit
Dinner: Mediterranean Chicken
- Chicken breast cut in half, in a baking dish. I season with salt, pepper, oregano, and a squeeze of lemon juice.
- Top with a container of your favorite hummus! (I like making my own - simple, and I control the flavors)
- Bake - 375 for approx 20-25 min (depends on the size of chicken breast you use)
- Once it’s done, top with diced cucumbers, tomatoes, kalamata olives and feta
- I serve my own over salad, and pair with a small pita or naan
- My whole family devours this!
Dinner: Turkey Cups
- 1 ½ lbs ground turkey
- Frozen mixed veggies
- Jumbo Biscuits
- BBQ sauce
- Cook ground turkey in a pan, then add the mixed veggies. Cook until all heated through.
- Add bbq sauce and let simmer
- Take the biscuits and a muffin tin, stretch out the dough to make a cup and fit in muffin tin
- Fill each biscuit cup with bbq turkey mixture and bake according to biscuit directions.
- This is a big hit in my house and probably the most requested meal
Lunch: I generally try to eat leftovers from the dinner the day before, if there are any.
