Family Friendly Crock Pot Recipes

We understand the chaos of everyday life, the endless to-do lists, and the desire to serve up meals that are not only wholesome but also cherished by even the pickiest eaters.

Slow Cooker Beef Stew

Makes 4 servings / Serving size: 2 cups

INGREDIENTS

  • 1 lb beef stew meat, cubed

  • 1 cup uncooked couscous

  • 2 cups carrots, sliced

  • 1 cup celery, diced

  • 1/2 cup onions, diced

  • 1 cup mushrooms, diced

  • 1 cup potato of choice

  • 28oz can crushed tomatoes

  • 4 cups broth of your choice

  • 1 cup water

  • 2 tsp parsley

  • 2 garlic cloves, diced

  • 1 tsp paprika

  • Salt & pepper, to taste

DIRECTIONS

  1. Add all ingredients to slow cooker.

  2. Cook on low for 8 hours.

  3. Cook on high for the last 30 minutes before eating.

  4. Serve.

Slow Cooker Chicken Verde

Makes 8-10 servings

INGREDIENTS:

  • 3lbs boneless, skinless chicken breasts

  • 4 cups salsa verde- your choice of jarred salsa verde

  • 1 medium onion, chopped

  • 1 15-oz. can pinto beans, drained and rinsed

  • 1 15-oz. can black beans, drained and rinsed

  • 1 15-oz. can corn

  • Optional: 1 cup quinoa, rinsed

DIRECTIONS:

  1. Place chicken on bottom of slow cooker. Top with salsa, then remaining ingredients.

  2. Cook on Low for 6-8 hours.

  3. Optional: The last hour of cooking, add 1 cup quinoa to slow cooker, stir and replace lid.

  4. Let chicken cool, then remove from slow cooker and shred.

SERVING SUGGESTIONS:

  1. Mix shredded chicken back in with ingredients in slow cooker.

  2. Serve over mixed greens or fresh spinach to create a salad.

  3. Serve over black bean soup with fresh tomato salsa.

  4. Serve over rice or in tortillas.

  5. Serve with sliced, roasted bell pepper and cherry tomatoes.

  6. Serve with chopped, fresh cilantro and guacamole.
