Easy Winter Recipes
Turkey Chili
Makes 4 Servings
Serving Size: 2 cups
Ingredients
1 TBSP oil of your choice
1 lb. ground turkey
1 onion, chopped
1 red bell pepper, seeded and chopped
3 garlic cloves, chopped
1 (14 1/2 oz) can diced tomatoes
1 (15 oz) can kidney beans, drained and rinsed
2 cups water*
1 cup low-sodium vegetable broth
1 TBSP chili powder
1 tsp each of cumin, oregano, coriander and red chili flakes
*Add more or less water depending on desired thickness.
Directions
Cook ground turkey in a nonstick pan over medium heat. Try not to cook until it is fully done - you will want that to happen in step #5.
Heat oil in a medium-sized pot.
Add onion, pepper, and garlic and saute until soft.
Add turkey, tomatoes, and the remaining ingredients. Bring to a boil.
Lower heat, cover, and simmer for 1 hour, adjusting seasoning as desired.
Chickpea Cannellini Ragout
Makes 4 Servings
Serving Size: 2 Cups
Ingredients
3 TBSP oil of your choice
3 garlic cloves, minced
1 large onion, chopped
2 medium-large leeks, washed well and sliced in rounds
1 32-oz. can whole, peeled tomatoes with their liquid
1 16-oz. can chickpeas, drained and rinsed
1 16-oz. can cannellini beans, drained and rinsed
3 cups stock of your choice (chicken or vegetable recommended)
8oz frozen spinach or 1 cup fresh
Directions
Heat oil in a skillet & add garlic, onion and leeks. Cook until soft.
Add the remaining ingredients, except for the spinach, and cover skillet.
Bring to a boil and let boil for 10 minutes.
Lower heat to simmer and add greens. Stir to incorporate.
